FRYING TIPS
-
If you do not intend to use the
deep fat fryer regularly, it is advisable
to store the oil in a well closed recipi-
ent, preferentially in the refrigerator
or in a cool place. Use a colander with
small holes to remove food’s residues
from the oil before storing it.
-
To minimize the unpleasant fla-
vors left by other food, especially fish,
warm the oil at the temperature of
160° and dip two fine slices of bread
or some parsley into the oil. Wait until
the oil stops boiling and remove the
bread or the parsley from the deep fat
fryer using a spatula.
-
Fry the maximum of 200 grams of
fresh food per liter of oil and the
maximum of 100 grams of frozen
food.
-
Remove excessive ice from the
food before frying.
-
Preferentially, leave the food to
defrost at room temperature before
frying, unless the food’s package in-
structions advise other procedure.
-
Dry fresh potatoes after washing
and before frying to avoid mixing wa-
ter with oil. Fry fresh potatoes in 2
steps: first step (pre-frying): 5 to 10
minutes at 170°C; second step (final
frying): 2 to 4 minutes at 190°C.
